Cinnamon Applesauce Waffles

I have every other Friday off. This morning I woke up promptly at 9:30am (as apposed to my normal 4:30am) with a rumbly stomach. I kicked around a few ideas for breakfast, Simple Cream of Wheat, Pancakes, Crepes and a few others before deciding on experimenting with Applesauce pancakes. A quick Google found this RecipeZaar recipe I settled on it as the base for my breakfast.

The recipe I found didn't use enough applesauce in my opinion. So I swapped the proportions of applesauce and milk. Also, I used way more cinnamon because when apples are involved, there can never be too much cinnamon!

My version of the recipe went like this:
  • 75g Bread Flour (5/8th cup)
  • 1 tsp Baking Poweder
  • 1 tsp Salt
  • 1 tbsp Splenda
  • 1 tbsp Cinnamon
  • 1 tsp Allspice
  • 61g Egg Beaters (1 large)
  • 1/4c Milk
  • 100g No Sugar Added Applesauce ( about 1/3 cup)
All the dry ingredients were sifted together. Notice this all happens on the scale for easy measurement.

In went the wet, Eggs, Applesauce and milk. I mixed it just enough to bring it together.

Spooned into a PAM'd waffle maker, 3 minutes later they were a perfectly crispy crunchy waffle! The recipe made 5 large waffles. Since I could only cook 2 at a time, the done waffles went onto a piece of aluminum foil in a 400ºf oven. All 5 Waffles (which I ate in one sitting), including 1/4 cup of Sugar Free Syrup, had a total calorie count of 405 calories! Not bad at all!
